I got this recipe for a pasta sauce from my goddaughter. Oh my. Musical pasta sauce.
in food processor: 8 roma tomatoes, de-skinned. a few baby carrots, a goodly squirt of tomato paste or alternately a bag of sundried tomatoes, about 3-4 T. olive oil and 4-6 T. balsamic vinegar. Whirr until smooth.
tn skillet sautee 8 oz. sliced mushrooms, a sliced onion and some sliced baby carrots, oregano, salt, pepper. add the blended stuff and let it simmer until carrots are tender. So good. So very very good.
